- 1¾ lbs boneless, skinless chicken breasts
- 4 large garlic cloves, minced
- 1 teaspoon dried thyme
- ½ teaspoon dried oregano
- ½ teaspoon freshly ground black pepper

- 1½ teaspoons fresh lemon zest
- 6 tablespoons extra virgin olive oil
Directions:
1) Beating
Put the chicken breasts in a 1-gallon freezer bag and pound them until they are all about 1/2 inch thick. This makes the meat more tender and even cooks it. When fillets are left in their original shape, the side that is thinner dries out while the side that is thicker keeps cooking.
2) Getting ready for the marinade
After grating the lemon, put everything for the marinade, except the chicken, in a gallon-sized zip-lock bag. This includes garlic cloves, thyme, oregano, black pepper, salt, etc.
3) Marinating
Put the chicken breasts in a plastic bag and rub the marinade all over the chicken. Put the sealed bag in a bowl and let it sit in the fridge for at least 30 minutes, or better yet, overnight (the bowl will stop any leaks).
