    • 2 cups long-grain white rice
    • 1 Roma tomato, diced
    • ½ medium onion diced
    • 4 cloves garlic minced
    • ¼ cup vegetable oil
    • 3 ½ cups broth
    • 1 ½ teaspoons kosher salt
    •  tablespoons tomato paste
    • ½ cup frozen peas


    • Put the rice in a strainer or colander with a fine mesh and rinse it under running water until the water is clear. Drain well.
    • Put the oil in a large saucepan or pot on low to medium heat. When the oil is hot, add the rice and cook it for 10 minutes, often stirring, until it starts to turn a light brown color.
    • Add the garlic, onion, tomato, and salt. For 30 seconds, stir and saute.
    • Add the chicken stock and tomato paste. Stir everything completely until the tomato paste is gone.
    • Bring to a boil, then lower to low heat, cover, and leave to cook for 20 minutes. Take the pan or pot from the heat, cover, and set aside for 5 minutes.
    • Add the frozen peas and fluff the rice gently with a fork. Don’t mess with it. If required, season with additional salt.
